30 Seconds and Every Ounce of Me

For eight years I counted to thirty
every time I pulled a shot
At eight seconds, the espresso would fall
Dark chocolate stream
eventually turning to caramel
everything that makes coffee good
was expressed and then the hot water
would flicker and thin
Press stop
Disengage the half-minute
An ounce exactly
Three layers, the crema settled on top
It is good
I am doing this right
